This September, Pastry Agency is thrilled to introduce Pastry Lab Academy, an exciting new project in the heart of Ibiza. More than just a café or bakery, Pastry Lab Academy is designed to be a creative culinary hub where pastry enthusiasts can elevate their skills through specialized masterclasses while enjoying our premium offerings in a boutique setting. It’s the latest evolution in our mission to merge gastronomy with an educational experience, bringing the artistry of pastry to life in a way that is both delicious and inspiring.

The Vision Behind Pastry Lab Academy

Pastry Lab Academy was born from the innovative mind of Andréa, one of Pastry Lab Academy’s visionary founders. Andréa’s goal was to create a space that offers more than just exceptional pastries—it had to be a center for learning and growth. While searching for skilled individuals to manage the boutique side of the business, Andréa saw an opportunity to build a professional pastry laboratory where both aspiring chefs and food lovers could come together to learn the secrets of the craft.

This laboratory is not about passively witnessing the creation of pastries but rather diving deep into the world of patisserie through immersive masterclasses. Participants will be guided by our experienced chefs, who will share their techniques, tips, and creativity. From delicate croissants to innovative desserts, the lab will host workshops that cater to all levels of expertise, turning Pastry Lab Academy into a must-visit destination for those looking to refine their culinary skills.

The Pastry Lab will be fully operational by the end of September, completing a months-long journey that began with Andréa’s vision. The space is crafted to inspire both novice and professional chefs to explore the art of pastry-making in a hands-on, collaborative environment. It represents a new chapter for Pastry Agency, combining our passion for high-quality pastries with our desire to educate and uplift the next generation of culinary talent.

A Coffee Shop Experience Like No Other

In addition to the masterclasses, Pastry Lab Academy is home to a vibrant coffee shop that opens at 8am each day. Offering a wide range of freshly baked viennoiseries, focaccia, and savory treats, it’s the perfect spot for an early morning coffee or a late brunch. The kitchen will be open until 3.30 p.m., ensuring that guests can enjoy fresh pastries and light bites throughout the day, whether they’re fueling up before a class or simply savoring a peaceful moment.

In the future, we’d like to shift the café’s ambiance in the evening, transitioning into a wine-tasting venue that would open from 6pm to 10pm. Here, guests can pair our signature pastries with carefully selected wines and other boutique products. Small-batch mignardises—bite-sized versions of our most popular pastries—are available for tasting, providing a unique way to sample a variety of flavors in one sitting. Whether you’re starting your day with a croissant or ending it with a glass of wine, Pastry Lab Academy offers a full sensory experience.

A Grand Opening to Remember

The grand opening of Pastry Lab Academy has taken place at Carrer De Castella 13, Ibiza, and we invited you to join us in celebrating this exciting new venture. At the event, you had the chance to explore our new space, meet our chefs, and experience the culinary delights that Pastry Lab Academy has to offer.

The event kicked off on Sunday morning with the setup of various stands, including a presentation table offering sweet and savory petits fours. Guests started arriving from 1 PM, welcomed by refined tastings. They were then given the opportunity to explore the production lab, where future masterclasses—now open for registration—will take place.

Two renowned chefs will lead these workshops: David, a chocolatier from the Italian brand Selmi, and Federico, an expert barista.

One of the highlights of the opening event was our live culinary demonstrations, featuring a blend of European and Asian flavors. Chefs prepared sushi and maki in real-time, offering guests an opportunity to sample these delicacies while learning more about the artistry and precision that goes into their creation. The fusion of these flavors reflects Pastry Lab Academy’s diverse and global culinary approach, where East meets West in a harmony of tastes.

Finally, the Artesanal Shop offered a curated selection of artisanal products for guests to take home. The day was marked by a warm atmosphere and a discovery of the artisanal and creative values of Pastry Lab Academy.

In the evening, the boutique transforms into a wine-tasting space, where guests can sample locally sourced wines, cheeses, and other gourmet items. The boutique extends Pastry Lab Academy’s philosophy of blending tradition with innovation, offering not only physical products but also a chance to continue your culinary journey long after your visit.

Workshops and masterclasses will be hosted regularly at the boutique, where attendees can gain hands-on experience in crafting their own pastries under the guidance of professional chefs.
