Valentin Sanchez holds a BTM Pâtissier (Pastry Chef), a CAP and a BEP Pâtissiers (Pastry Chef) as well as a Complementary Mention in restaurant desserts.
This former ENSP student continued his training in Puy-en-Velay and Lyon before becoming a pastry chef for a year in Val Thorens. He was then appointed production manager for Traiteur Gabriel, in Villeurbanne, for three years, then he flew to Amsterdam where he joined the Petits Fourcakes pastry shop as pastry chef in 2014.
It was in 2016 that Valentin returned to the Ecole Nationale Supérieure de Pâtisserie (ENSP), but this time as a chef trainer.
